Sprouts

What better way to get fresh vegetables all year round, grown without pesticides, than sprouts? Each bite of sprouts is loaded with enzymes, vitamins, minerals and and countless other nutrients. Sprouts are an economical choice of vegetables-- especially in the winter. Sprouts offer variety too- several different seeds can be used for salads, sandwiches and other fresh dishes while there are a number of options of sprouts for cooking as well.

Probably one of the biggest things that make sprouts so nutritious is the enzymes. In a day when so much of the food we eat is processed and "dead" -- totally devoid of enzymes-- sprouts are a refreshing change. Sprout seeds are loaded with enzymes and when those seeds germinate in to life the enzyme activity is increased many times. When you eat a handful of sprouts the enzymes are alive and aid your digestion in digesting what you ate taking a load off your over-loaded digestive system.

Alfalfa seed is probably the most popular variety we think of when we think of sprouts. But clover, radish, anise, sunflower seeds, fenugreek and broccoli seed vary nutrition and flavor. Clover offers a sweet subtle flavor while radish has a spicy slightly nippy twang. Broccoli is said to be one of the most nutritious amongst sprouts even containing cancer fighting properties. Anise add a bit of licorice flavor while sunflower seeds are often used in salads for a nutty addition.
Mung beans and soy beans are popular for stir fries and other Chinese dishes. Lentil sprouts have become a favorite of mine far surpassing the other beans. Lentil sprouts have a mild nutty flavor that is great sautéed with a little oil, onions and noodles. Sprouting grains before you cook them make them easier to digest and increase their nutritional value. Almost any grain can be sprouted.
