Herbs....
  Herbs. Is that a familiar word to you? It probably is and  it probably brings  a dozen connotations with it. Herbs have been around ever since God created the earth. God said in Gen 1:11, “Let the earth bring forth grass, the herb yielding seed…” That was before God created man in Genesis. Herbs were here before we were! Let’s explore some of the uses of herbs.

The Culinary Side of Herbs
If you don’t use herbs for cooking, you are missing out on a real treat! Herbs add variety and spice to ordinary foods. Try adding tarragon to your scrambled eggs tomorrow. You’ll be surprised at what just a splash of herbs can do! Of course many of us wouldn’t think about spaghetti without thyme, oregano, basil and garlic. It just wouldn’t be spaghetti without these herbs! But sometimes we cook up a pot of stew add some salt and pepper and think that’s all  there is to add- but did you  know you can make stew an elegant dish by sprinkling it with  some thyme, savory and onion powder? For those of  you who are trying to cut back on the salt, herbs can be a meal saver.

One of my mom’s all time favorite herbs was basil. Fresh, frozen or dried she snuck it in to allot of dishes. Basil is one of the milder herbs and yields a slightly licorice taste. An Italian spice, it is used in most Italian dishes. Sliced fresh tomatoes with chopped fresh basil sprinkled with a bit of cider vinegar is a summer treat.

The Fragrance of Herbs
The kitchen isn’t the only place herbs rate- for potpourris and sachets, relaxing baths and moth repellent, herbs stand their ground.  Grandmas week long visits to our house were usually marked with her latest project with herbs. We helped her make dream pillows, potpourri jars and bags, closet hangers, and a host of sachets. Grandma dried whatever herbs she could get fresh and saved them for these occasions.

One of mom’s favorite herbs in this category was lavender. One of the more fragrant herbs, lavender has been know since ancient times for its fragrance. Moths also have recognized it’s fragrance and do not generally prefer it’s company.

Herbs- A Natural Medicine
More and more people today are turning back to herbs- the medicine of yesterday. In contrast to drugs, herbs have a gentle approach to healing and nourish the whole body rather than just nailing the problem. Of course there are a variety of herbs with their individual purposes. Some herbs cleanse. Some herbs nourish. And some herbs heal.
Red Clover, Dandelion, and Milk Thistle are cleansing herbs.
Alfalfa, Red Raspberry Leaf, and Oat Straw are nourishing herbs.
Goldenseal, Valerian, and Echinacea are herbs that help address specific problems and heal them.

Of course, with herbs there are not clear cut lines, but as we said earlier, herbs are gentle and usually are 100% safe and so these lines of cleansing, nourishing, and healing herbs are only guidelines. Overlapping herbs is in most cases is ally safe and can actually encourage healing as the herbs work together to accomplish your goal.

Herbs Just for Fun!
Herbs can be just plain enjoyable! Like a cup of tea with a friend. Anything shared with friends can be pleasant and herbs give just such an opportunity. Next time try something other than the traditional herbs like Peppermint and Chamomile. Why not Lemon Grass or Rose Hips?

Or for a hot summer day place a sprig of herbs- like Peppermint or a flower like Chamomile or Rose Buds in a cube of water and freeze for eye catching ice cubes.

Herbs For Gifts
Herbs are a great gift idea. There is so much variety with herbs and so many things you can do. Make a seasoning blend of herbs for cooking, bag it up, tie it with a ribbon and label it, and there- you have a unique gift for someone special. Of course there are always sachets and potpourri mixes that can be unique just because you made them.

One of the things that make herbs great for gifts is that it is easy to do several sachets or potpourri bags at once for hardly more time.

Herbs Can Be Economical
Herbs can be just plain economical. Especially if you can grow your own or buy them bulk somewhere. You save allot when you blend your own herbs for seasonings or potpourri or when you buy herbs loose for tea.
